Cooking packaged dry beans isn’t hard. It just takes a little preparation time.
- Follow the package directions, sort by removing damaged and broken beans; look for any foreign matter like adobe or small stems and remove.
- Thoroughly rinse and drain beans before soaking.
Quick Soak Method:
Cover beans with water and boil for two minutes. Cover pot; soak for one to four hours. Discard soaking water; cover beans with fresh water and simmer for 30-45 minutes until soft.
Overnight Cold Soak Method:
Cover one pound of dry beans with six cups of room temperature water and soak overnight. Discard soaking water; cover beans with fresh water and simmer for 1-2 hours. Beans are done when you can easily mash them between your fingers or with a fork.
Bean Math
1 pound of dry beans = 2 cups yields 6 cups cooked beans
1-15 ounce can = 1 ½ cup cooked beans
